Yes, you read that title right. As demonstrated in my Easter Soup diary, you can use ANY meat product you simmer to cook to make a stock. And a stock means yummy soup. So off we go, and hold on to your butts.

So I had two approximately 4lb corned beefs. I used my crock pot instead of a regular pot, because my crock pot holds a LOT more stuff. I put the beefs in there, along with some pre-chopped onion, some garlic cloves, and some bite sized parmesan rinds, along with the seasoning packets, and some herbs and spices I felt like throwing in. Whatever works, you know?
I added the water (around 8+ cups) and set the crock pot on low. I let it go until the meat was fork tender. For me it was between 8 and 12 hours. YMMV depending on your crock pot. See my diary on the subject. Once the meat was done, I took it out and set it aside to cool. Then I added a 2-3lb head of chopped cabbage, a pound bag of carrot coins, and a pound of micro potatoes (Little Potato Company Garlic and Herb) to the pot and let it go until everything was tender and cooked through. I then wrapped the meat in foil, and after the crock pot had cooled a bit, put it in the fridge.
The next day, I took the pot of soup, which had developed a hard and THICK layer of fat on top, put it back in the heating part of the crock pot, and before turning it on, cracked and took ALL the fat that had build up. Pro tip: If you’re making some kind of soup/stock/stew, let it sit overnight and the fat will harden on top of everything. Then you can take it all off.
After I removed the fat, I reheated the soup and cut one of the corned beefs into small bite size pieces. The other one I used to make sliders. I added the meat to the pot, let it heat, and then as it cooled, I portioned it out. It made like 22 5-6oz servings. Perfect for bariatric patients. Fewer than 220 calories, and like 16g protein. So good. So nutritious. So KETO friendly. Here’s what it looked like:

Anyway, tonight I’m having small foods at my choir’s fundraiser and cabaret. BUT, tomorrow I’ll take a nice big marinated skirt steak and some low low carb tortillas and go to town.
