Didja ever remember something you used to eat regularly as a youngster that your folks made? You can remember only vague details of how it was made, and even what went into it. Then you try to make something similar but it’s nothing like it, but it still tastes good. That’s what happened to me a few weeks ago.
See, what had happened was, I was shopping at the Aldi and saw the ravioli. And I remember something I used to enjoy, and even made it occasionally up to like 8 years ago. I remember ground beef, onion, a gravy (not too thick), and some kind of filled pasta. I don’t think it was Stroganoff like, but it could have been. I remembered this meal and bought the ravioli thinking I could recreate it. But for the life of me I couldn’t figure out how, let alone what was in it. So I made something up.
I began by taking some onion and canned mushrooms and sauteeing them in a LOT of butter.

When I got them where I wanted, I put them to the side and browned a package of beef sliced for carne picada. When that was done, I added the veg to the meat.

I added a bit more butter, then some flour to make a roux. I used a combination of Better than Bouillon and boxed beef stock to make the gravy. I let it simmer for over an hour to help thicken, and to cook the meat tender.

Then I added the ravioli, brought it back up to a boil, and boiled per package directions.

The result is what you see in the cover photo. It turned out REALLY good. The beef was tender and the gravy was flavorful, and as you can see I used a variety of shapes and flavors of ravioli, and the tastes and textures of both the shapes and filling was really fun to enjoy.
